A small inserted image takes all the width of the document, and the effect of the upscaling often lead to blur.
Is there a way to impose the exact size of the image in the document other than by trial and error.

What version of Infix are you using?
When you insert an Image using the Object->Image->Insert… menu they should always be inserted at the original size unless they are bigger than the page on which they are inserted. In which case they will be scaled down to fit. They should never be upscaled.
You can change the size of an image was inserted using the Object->Transform… menu.
